INGREDIENTS
- Fennel (½ Bulb)
- Finely shredded cabbage (White/Red/Both – 2 Cups)
- 2 Carrots
- Apple Cider Vinegar (3 Tbsp)
- EVOO (4-5 Tbsp)
- Fresh Herbs
- Salt & Pepper
- Nuts or seeds (½ Cup)
WHAT TO PREP
Use a peeler (or finally shred with a sharp knife) and shave the cabbage & fennel into a mixing bowl. If you have a spiralizer, I use the zyliss brand. It looks like a peeler & makes the best julienned veggies, making you look like a pro!! Shave the carrots into julienne into the bowl too with other ingredients (looks like thin spaghetti).
HOW TO PUT TOGETHER
Add the apple cider vinegar, EVOO, salt, pepper & any fresh herbs you have & toss it really well, scatter over some nuts or seeds to add fibre & crunch. Taste it & add more EVOO, apple cider vinegar, salt or pepper to taste.
I love chia seeds, sunflower seeds, chopped almonds or pistachios, any nuts or seeds you really like. NO RULES.
