INGREDIENTS
- Shaved Red Cabbage (1 Cup)
- Mung Beans (1 Cup)
- Shredded Sugar Snap Peas (1 Cup)
- Pea Shoots (1 Cup)
- ½ Red Onion
- Alfalfa Sprouts (1 Cup)
- EVOO (¼ Cup)
- Balsamic Glaze – or any vinegar mixed with a tsp of honey (2 Tbsp)
- Salt & Pepper
WHAT TO PREP
Use a peeler & shave the cabbage into a mixing bowl. (Or finally shred with a sharp knife)
HOW TO PUT TOGETHER
Finely shred the sugar snap peas, add to the bowl.
Get a handful of the pea shoots & finely chop to make a cup worth, add to the bowl.
Finely dice the red onion, add to the bowl.
Add the cup of mung beans & alfalfa sprouts, pull all the alfalfa sprouts apart.
Add the EVOO, vinegar, salt & pepper to taste. Mix well & chill until serving. If you like to add some nuts & seeds too, bump up the fibre.
