INGREDIENTS
- 1 Medium Red Onion
- Garlic (3 Cloves)
- Ginger (4cm Knob)
- Coriander (1 Bunch)
- 1 Red Chilli
- Coconut Oil (1 Tbsp)
- Red Lentils (½ Cup)
- Tomatoes (3 medium or 400 Gram Can)
- Vegetable Powder (1 Tsp)
- 1 Lime (Juice & Rind)
- 2 Star Anise
- Fish Sauce (2-3 Tsp)
- Water to cover
WHAT TO PREP
Finely chop the onion, garlic, chilli, ginger & roots & stems of the coriander. If you have one, use a mini chopper to get it really finely chopped.
HOW TO PUT TOGETHER/COOKING
Add 1 tablespoon of coconut oil to a deep saucepan (or use a crockpot). When the oil melts add the onion mixture & saute for a few minutes.
Meanwhile, chop the tomatoes in the same mini chopper or by hand.
Add the red lentils, tomatoes, star anise & the rind of the lime. Add water to cover. Add the fish sauce & the stock powder.
Bring to the boil, turn down & simmer for 30 minutes until the red lentils are mushy. May take a bit longer than 30 minutes.
Add the juice of the lime & some of the coriander leaves roughly chopped.
Taste for seasoning, add more fish sauce if needed & lots of black pepper.
