INGREDIENTS
  • Spinach & Kale Mixture (4 Cups)
  • EVOO
  • Salt & Pepper
  • 1 Egg
  • Pesto or Goat Cheese (½ Tbsp)
  • Lime Juice
  • ½ an Avocado
  • Cayenne Pepper (A pinch)
WHAT TO PREP

Preheat the oven to 180 degrees.

HOW TO PUT TOGETHER / COOKING

In a wok or deep frying pan, add some EVOO & saute the greens with some salt & pepper until wilted & crispy.

In a small ovenproof dish crack the egg in, dollop some pesto or goat cheese around the egg & then pile the greens on top. Lightly cover with foil & pop in the oven for 15-20 minutes until the egg is cooked to your liking.

While the egg cooks cut the avocado into cubes, drizzle with lime juice, sprinkle with salt & pepper, cayenne too if you like a bit of spiciness.

When the egg is ready scatter the avocado on & eat!!
