INGREDIENTS
- 2 Carrots (Skin on)
- 15 Mejool Dates
- Cinnamon (3 Tea sp)
- Chia Seeds (1 Cup)
- Unsweetened Shredded Coconut (1 Cup)
- Salt Flakes (½ Tea sp)
- Coconut Oil (2 Table sp)
WHAT TO PREP
- Cut the ends off the carrot and cut into smallish chunks
- Pit the dates
- Add all the ingredients to a food processor/thermomix/nutri-bullet
- Process for 2 minutes until blended
HOW TO PUT TOGETHER
Roll into approximately 26 walnut-sized balls, roll the balls in chia seeds to coat and pop in the freezer for 30 minutes or so to set.
