INGREDIENTS
  • 2 Carrots (Skin on)
  • 15 Mejool Dates
  • Cinnamon (3 Tea sp)
  • Chia Seeds (1 Cup)
  • Unsweetened Shredded Coconut (1 Cup)
  • Salt Flakes (½ Tea sp)
  • Coconut Oil (2 Table sp)
WHAT TO PREP
  • Cut the ends off the carrot and cut into smallish chunks
  • Pit the dates
  • Add all the ingredients to a food processor/thermomix/nutri-bullet
  • Process for 2 minutes until blended
HOW TO PUT TOGETHER

Roll into approximately 26 walnut-sized balls, roll the balls in chia seeds to coat and pop in the freezer for 30 minutes or so to set.
